9:18 here for a very unique Chongqing dish, the Mao Shu Wong.

9:22 They've got [music] a Jaoai Shu Wong dish, which is pork blood Chongqing style.

9:26 And you can see a giant caulron in the back there.

9:28 They're going to start cooking it right now.

15:27 And they just brought us a surprise map tofu, guys.

15:30 This is my favorite dish of Sichuan.

15:32 Seriously, this dish is classic for being

15:34 umami because they use Sichuan doanjang, which is fermented broad bean paste.

15:37 They ferment the broad beans for years.

15:39 So, it's a natural umami.

15:40 There it is.

15:49 Best Sichuan dish for me, guys.
