0:10 -Yes.

0:11 -We're gonna toast as with all things— -I know you like a cocktail,

0:13 but this is a juice.

0:14 -This is a healthy juice -To keep you extra healthy.

0:16 -Thank you.

0:18 Your food at your restaurant is very healthy.

0:19 I'm a huge fan of it.

0:20 My whole family is.

0:22 We bring our kids there because it's good, healthy food.

0:24 And my wife sent me so many pictures of our kids eating at your restaurant.

0:27 And I said, "I can't show these because the kids

0:29 are so disgusting the way they eat." -Mine are too, when they eat there.

0:33 -I know, but your food is beautiful and like

0:35 showing it with my kids eating it seemed deeply unfair.

0:37 -I would have loved to see that.

0:38 -Yeah.

0:38 -But no thank you.

0:39 -Alright.

0:39 What are we making today?

0:40 -We are making superhero burritos.

0:42 Okay, great.

0:43 Okay.

0:43 -With Tofu.

0:44 -And we're going to start cooking.

0:45 And actually, you love this burrito.

0:48 -I do love this burrito.

0:49 -And I don't know if I'm allowed to say this on television, -Go for it.

0:53 -But when we first opened, you ordered a burrito.

0:57 -Online.

0:58 -Online, and I got a text from my manager.

1:01 she was, the whole team was really excited

1:03 when they saw your name, and she said,

1:04 "I have good news and bad news," which is always never

1:06 a text you want to get when you own a restaurant.

1:09 She said, "The good news is Seth Meyers ordered a burrito.

1:12 The bad news is he didn't get it because he

1:14 ordered it to the Aspen location." -I did, I did.

1:17 -So, yeah it was.

1:18 -I did.

1:19 -It was a little unfortunate.

1:19 -And, you know?

1:20 I will say like, I sometimes order pizza at the wrong

1:22 of two pizza places and you only have to like walk two avenues.

1:25 -This was a little harder.

1:25 -When I was like— When it's in Aspen, I'm like,

1:27 "I'm not gonna have that burrito." -Well, we're making it here.

1:29 -We're making it here.

1:30 To make sure you got one tonight.

1:31 Okay.

1:31 -Alright, so what do we do?

1:33 -We're going to pour in the avocado oil and then I want you to cook.

1:36 So here, throw in the onion.

1:37 -Okay, great.

1:38 -We're going to do onions.

1:40 Skillet sizzling] -Peppers.

1:41 -I love when people give me the easiest job.

1:43 Laughter] I'll throw in those.

1:46 -Mushrooms.

1:46 -Potatoes.

1:47 Oh, I did that.

1:48 Sorry.

1:49 -Tofu?

1:49 -Well stir.

1:49 Let's stir a little.

1:51 -Okay.

1:51 -Just we don't want to— You know, we want— -Don't correct me on my show.

1:54 Laughter] -So just throw it in all together.

1:57 -Eat it.

1:58 -Yep.

1:58 Alright.

1:58 Great.

1:59 -Okay, and then we're going to let this brown.

2:01 -Okay.

2:01 -We want to do a pinch of salt.

2:03 Season as you go.

2:04 Season as you go.

2:05 -And how long would you ac— If you had the time to do it,

2:07 how long would you actually do this part?

2:09 -Well, I probably would have let the onions cook down for 2 to 3 minutes,

2:13 but it's like five minutes all in.

2:15 And then we're gonna add the tofu.

2:17 And now do you want to add the seasoning?

2:19 -I would love to.

2:20 -Cumin, Turmeric.

2:21 -How much of it just pinches.

2:23 -Pinch or just go all in.

2:24 Just get in there.

2:26 -That's great because it gives it a lovely color, a lovely taste.

2:29 -Lovely color, we want the tofu to brown.

2:31 -Yeah.

2:31 Okay.

2:31 It's very healthy.

2:33 -And then break it.

2:33 Break it down a little bit.

2:35 Because we don't want these chunks.

2:36 -No, no, nobody wants the chunks.

2:38 -You want to, you know, mash.

2:40 -And how many years have you had both restaurants?

2:43 -They'll be 13 in July for Aspen.

2:45 -Congratulations.

2:47 Cheers and applause] -And five and a half here.

2:49 -And it was the key when you were putting the cookbook together,

2:52 obviously, you know, it's people who want to eat healthy food,

2:53 but you want to make it like so there are actual recipes they can make.

2:56 Was that.

2:57 -Yes.

2:57 I wanted it to be approachable, simple.

2:59 I think people get really intimidated by vegetables and vegetarian food.

3:02 I think we're good.

3:04 It's crumbled.

3:04 -I feel like either this should be a little bit bigger,

3:07 or we should put a little few onions.

3:08 Or maybe— Maybe just taken our time a little bit more.

3:12 But you know, when you do it at home,

3:14 it'll look like this because of the magic of TV.

3:17 -This is very good juice.

3:18 -So this, this is our filling.

3:19 -Really?

3:19 Thank you.

3:20 I'm so glad.

3:20 -Yeah.

3:20 -I had them put tequila in mine.

3:22 Laughter] -I was gonna say that was really a winning endorsement.

3:26 -Yeah.

3:26 No, it was really good.

3:27 And it's real— Your food is really good.

3:29 Laughter] -Thanks.

3:32 -Okay, so now are you ready to roll a burrito?

3:33 -That's right.

3:34 Yeah.

3:34 Okay.

3:34 -Okay.

3:34 So you're gonna take your filling.

3:36 -Okay.

3:36 -And put some— And don't— don't overload it or overload it.

3:40 -Okay.

3:40 That seems right.

3:41 -Just letting you know.

3:42 -Okay.

3:42 -Burrito maker beware.

3:44 So just put in as much as you'd like.

3:46 And then I know you love hot sauce.

3:47 -I love hot sauce.

3:49 -So I brought some Spring Cafe hot sauce for you.

3:51 -Great.

3:52 Okay.

3:52 -And add that in.

3:53 -And then cheese.

3:54 I like a little extra cheese.

3:56 So I'm going to sprinkle that and then sour cream.

4:00 -I mostly feel very confident about this and I'm worried about rolling it.

4:04 -It's okay.

4:05 But you have three kids.

4:06 So remember swaddling them as babies?

4:08 -I do.

4:09 -It's like a swaddle.

4:10 -Okay.

4:10 -It's like a tuck roll.

4:11 -Right?

4:11 -Guac, did you do guac?

4:13 -Uh-huh.

4:13 Okay.

4:13 Alright.

4:13 I'm gonna do some guac.

4:14 So?

4:14 -So you can do either.

4:17 You know what?

4:17 I need a little more filling.

4:18 -It's just if this had legs, I would know how to do it.

4:21 Laughter] The absence of legs is making it hard.

4:24 -Okay, we're gonna go like this, and then you kind of fold over,

4:28 and then you want to— You want to pull it in tight.

4:32 You need a tight burrito.

4:33 -Alright, I can deal with that.

4:33 -You need a tight roll.

4:34 Oh, look at that!

4:35 -That's a good burrito.

4:36 Cheers and applause] Okay.

4:40 -Yep.

4:40 I'm gonna have a bite now.

4:42 I mean, we have a really nicely cut one for you,

4:44 but you can have a bite of this one.

4:50 It looks beautiful.
