I Ate In America's Pizza Capital To Find The Best Pizza

0:01 they make the best pizza in the United States, like New York or Chicago,

0:05 or a random guy in Arkansas named Lenny who makes it in his backyard shed.

0:10 And clearly, it's ficasha bread at best.

0:12 But there's another place in America whose pizza is so good

0:14 they have been dubbed by many as the pizza capital of America,

0:18 New Haven, Connecticut.

0:19 So today, I'm going to 10 of the best pizza

0:22 spots in New Haven to see which one is best.

0:24 And since I just did the same thing in New York City,

0:26 I'm going to compare which style I like more.

0:28 My opinions on New York pizza went really well when I was there,

0:31 so it should be another success here.

0:35 Well, darn.

0:35 Maybe not.

0:38 New Haven style pizzas are called this, which looks like a pizza,

0:41 but really it's pronounced a Beats.

0:43 And that's really fun to say, and I will say it a lot in this video.

0:46 And if you're wondering what the differences are

0:48 between a Beats and New York style pizza,

0:50 well, fortunately, I read an article before this.

0:52 Shout out Reading.

0:53 I can read sometimes.

0:54 Both styles are thin, but New Haven style is very thin.

0:57 In terms of cheese, New Haven has a light touch,

0:59 while New York has a generous amount of low moisture mozzarella.

1:02 New York style has more sauce that is seasoned,

1:04 and New Haven has less sauce that is more tomato forward and simple.

1:08 And the crust, the New York style is foldable and more golden brown,

1:11 being cooked at around 500 to 600° F,

1:14 while New Haven style is cooked around 650° F.

1:18 And the crust is charred for a complex flavor, but it is not burnt.

1:21 If it is burnt, that is not New Haven style.

1:24 That is just me messing up my desouro pizza.

1:26 on the oven again.

1:27 And now let's go into the grading of the a beats.

1:29 Crust is the most important component and will

1:31 be weighed at 30% of the total score.

1:34 Taste files at 25%, sauce and cheese will be both 15% and quality,

1:39 appearance, and authenticity will all be 5% each.

1:42 So, now that you know what New Haven Beats is, let's go eat some now, shall we?

1:46 Well, I guess not you you guys, but like me and Bill.

1:49 I mean, you you could watch if you want.

1:50 I picked up Bill at 5:00 a.m.

1:52 That sucked.

1:53 Another day, another dollar.

1:54 I am not conscious currently.

1:56 And we got on an early flight to Detroit.

2:03 Dude, you want to get a Cody dog at 7:35 in the morning?

2:06 Sure.

2:07 Okay.

2:07 And then a few hours later got on another flight to Hartford,

2:10 Connecticut after spending an exorbitant amount

2:12 of money on Hartford Whalers gear.

2:15 This is an issue.

2:16 We hopped in a rental car and drove

2:17 an hour to our first stop in New Haven, Connecticut.

2:20 Modern of Beats.

2:21 Oh no, there's a line.

2:23 Oh no.

2:25 Oh no, that wasn't good.

2:29 We should maybe go to another one.

2:30 Just kidding.

2:31 The line was very long and there's

2:32 absolutely nowhere to park in New Haven, Connecticut.

2:34 In fact, it's almost impossible in some areas.

2:37 Dude, what is that?

2:38 What does that sign say?

2:40 No st.

2:40 Can you do anything in Connecticut?

2:43 What does that even mean?

2:45 You can't stand here.

2:46 So, we decided to go to a different location in the area

2:48 as our first Aussies beats founded in Los Angeles in 2021.

2:52 and Chris Wallace found success there and wanted one back home in New Haven.

2:56 So, he put this one here in August of 2024.

2:58 Aussies operates out of a shared food space

3:00 and as we were walking in, the owner,

3:03 Chris, just so happened to be there.

3:05 And it just so happened that he also watches the videos.

3:07 I didn't expect anybody there to know me.

3:09 So, it was just it was really cool.

3:10 Chris and head chef Lou let us film a lot

3:12 of the behind the scenes of making the beats.

3:15 And I know this looks like it's

3:16 going to compromise the judging for this competition,

3:18 but rest assured, I take pizza eating very seriously.

3:22 Everyone's going to get judged fairly, but I will take any access I can get.

3:26 I'm going to get a standard pie at each spot,

3:28 but we had two pizzas made because they

3:29 also wanted us to try the Buffalo chicken pizza.

3:32 And even though it won't count for anything, I will be deleting it.

3:35 And oh boy, does that baby look delicious.

3:37 I really enjoyed the standard pie.

3:39 The char and the crust was exceptional.

3:41 The sauce was delicious,

3:42 and every component of the pizza was balanced perfectly.

3:44 Bill and I had a rule this time that since

3:46 we absolutely got destroyed by eating New York pizza

3:49 at 10 different spots that we were only going

3:51 to have one slice or maybe two slices per spot.

3:54 And you're probably all realizing right now that I did not

3:58 do that because New Haven style is a much thinner pizza.

4:00 Our brains were tricked into eating more.

4:02 But it doesn't take much to trick me.

4:04 For the third time this week, I fell for the tunnel painted on a wall prank.

4:08 This is one of the best slices of pizza I've had in my entire life.

4:10 And it this is how New Haven style is going to taste.

4:13 Then New York pizza is going to be like

4:14 a guy who's getting bribed into getting back into shape.

4:17 It's going to have a run for its money.

4:20 We then got delicious coffee made for us

4:22 across the shop at Groundup Coffee by Trevor,

4:24 who also happens to watch the videos with his girlfriend Nicole.

4:27 And unrelated news to my ego, I'm starting to like New Haven a lot already.

4:32 So they just set the bar really high.

4:34 Like we dropped off our stuff at the Airbnb.

4:37 Dude, are you serious?

4:40 I'm calling the police.

4:41 I'm sorry.

4:42 You're going You're going to jail, my friend.

4:44 And then walked to our second spot of the trip, Sally's, founded in 1938.

4:49 And uh-oh, we were in trouble.

4:51 Oh god.

4:55 We got to just wait, bro.

4:59 What?

4:59 We're going to have to wait for it.

5:00 Sally's is one of the holy trinity or big three pizza spots in New Haven.

5:04 The other two being Frank Pepe and Modern Beats.

5:07 the first location we were trying to go

5:09 to, but we didn't because we were impatient.

5:11 So, the fact that we are faced with another line just to get

5:14 into the restaurant again is really good for the plot, I must admit.

5:17 We waited outside in the cold for an hour and fought the urge to get

5:20 a to- go pizza because I'm an impatient

5:22 millennial who craves instant gratification and avocado toast.

5:26 And we were eventually able to sit down inside the restaurant.

5:29 Shout out patience.

5:30 The New Haven area is known for Foxon Park,

5:33 a delicious soda company located in nearby East Haven.

5:36 And as sodafines ourselves, we dabbled.

5:38 Our pizza was delivered quicker than my twin brother

5:40 and I because we were born a month premature.

5:44 Sorry, was that too far?

5:45 And in natural me fashion,

5:46 I didn't wait for it to be cooled down and I burnt the absolute out of my mouth,

5:51 reviving any taste buds I had left.

5:53 I took some cooler bites of the Aits and uh yeah,

5:55 New Haven style pie is just really freaking good.

5:58 I'm not a big crust guy.

5:59 Typically, I scoff when I seize it,

6:02 but the New Haven crust is so good, you just got to devour it.

6:05 And these pizzas again are so thin,

6:07 which is great because they're easy to consume,

6:09 but that's also bad because Bill and I almost polished off

6:12 another pizza and we still have eight more spots to go to.

6:15 Learning lessons is not my middle name.

6:17 It's actually Leon.

6:19 No standing Bill.

6:21 Now, one of the best places to eat food is at a five-star restaurant.

6:26 And five is a lot of stars.

6:28 You can tell because it's one more than four, and it's even two more than three.

6:32 When you go to a fivestar restaurant,

6:37 But hypothetically, let's just say it's an absolutely

7:34 three spots in New Haven and our third overall.

7:37 Frank Pepe.

7:38 Frank Pepe was actually the first pizza spot to open in New Haven in 1925.

7:42 Over 100 years old and the founder of the Abe style.

7:46 Sally's was founded by the sister of Frank Pepe.

7:49 So like apparently this family is just generational at making pizza.

7:52 A lot of people told us to get the clam pizza at Frank Pepe,

7:55 but since I want to keep these orders

7:57 as uniform as possible when going to all these restaurants,

7:59 we got the standard pie, but then we also got the clam pizza as well.

8:02 Damn it.

8:03 Oh yeah, and one thing before I forget,

8:04 New Haven pizza ordering is is very interesting to say the least.

8:08 If you ask for a plain pizza in this town, you will get one without cheese.

8:11 I was always taught that a plain pizza meant a cheese pizza.

8:14 So that's pretty confusing for me, a guy who is easily confused.

8:18 So if you want a cheese pizza, you typically ask for a mozzarella pie.

8:21 There you go.

8:22 You're welcome for the knowledge.

8:23 Anyways, the clamp pie wasn't bad.

8:24 It wasn't really my particular favorite as it tasted a little fishy.

8:27 Hold on.

8:28 Wait one one sec.

8:29 What's that?

8:30 I'm being told that clams are in the ocean just like fish.

8:33 To no one's surprise, I wasn't sick of eating a beats yet.

8:36 And Frank Pepe was another heavy hitter.

8:38 The inside of my mouth wasn't a giant flamethrower.

8:40 The inside of my mouth wasn't a giant

8:55 The char on the mozzarella pizza was great.

8:57 And for a place to be in business over a hundred years,

9:02 And Frank Pepe is for sure doing something right.

9:05 Yo, tell me you're a pizza town without telling me you're a pizza town.

9:10 That's crazy.

9:12 Bill and I had one more pizza spot

9:13 for the day before preparing our future diarrhea for the morning.

9:16 And that spot was bar, which low-key might have the worst SEO

9:20 for a restaurant I've ever seen in my entire life.

9:23 But maybe that's just how confident they are.

9:24 And you know what?

9:25 When you when you go to bar, you're not like, "Oh, what's this place?

9:28 It's a bar." So, good job to you.

9:30 Bar B A R Bar B A R Bar B A R Bar B A R.

9:39 The spot was definitely more modern,

9:41 and you had to be 21 or older to eat in the bar called Bar.

9:44 And we were tucked away in a pretty cool spot overlooking part of the bar bar.

9:47 Our pizza came out and was cut less like

9:49 a New Haven pie and more like a bar pie,

9:51 which makes sense to have bar cut pie and a bar called bar.

9:54 And I fought the intrusive thoughts in my head

9:56 and let the pizza cool before eating it.

9:59 Allegedly, the pizza had a little less char than its competitors,

10:02 but the crust was still very good.

10:03 We didn't really get a lot of sauce on this pie.

10:06 Not that there is much on New Haven style to begin

10:08 with, but the crust and cheese flavor profiles definitely made up for that.

10:11 There definitely is a high bar for the bar cut pizza at the bar called Bar.

10:15 And barring any setbacks, bar might win bars.

10:18 And right across the street,

10:19 we had noticed an iconic place in New Haven called Louiswis's Lunch,

10:23 which fun fact claims to be the first restaurant to serve hamburgers.

10:26 We went there a couple days later after the pizza competition to eat.

10:29 And the hamburger is served just like it was in the early days on toasted bread.

10:33 But you cannot get ketchup.

10:34 They have a big sign that says no ketchup.

10:36 No ketchup.

10:37 I asked for ketchup on my burger.

10:39 Now I'm in federal prison.

10:40 Just kidding.

10:41 I have a tummy ache from the pizza,

10:42 but if you're an adult male, that's basically the same thing.

10:46 Anyways, Bill and I went to a couple

10:47 other bars that night that were not named bar.

10:50 Walked back to the Airbnb through some pretty fog.

10:52 I'm just like really impressed by this city.

10:55 Not that like I thought anything bad about it, but I just don't know about it.

10:59 I just wish I had palm trees.

11:02 Dude, could you imagine a Costco right there?

11:07 then went to bed because tomorrow we are

11:09 going to the remaining six locations on the trip.

11:16 The next day, Bill and I overslept and woke up really late, dude.

11:21 We slept in.

11:22 Just kidding.

11:23 It was like 10:00 a.m.

11:29 Yeah, usually you got to pay extra for that.

11:31 And our mission today was to get to the first

11:33 location we were trying to get to in the video,

11:35 Modern Beats, right when they opened at 10:30 a.m.

11:39 It's like someone's house.

11:41 Oh.

11:41 So, we got there right on time and still somehow weren't the first people there.

11:47 Modern is the final of the three Holy

11:48 Trinity pizza spots in New Haven, founded in 1934.

11:52 And let me tell you guys, pizza at 10:30 in the morning is an absolute gamecher.

11:56 I will eat basically anything at any time of the day,

12:00 but pizza in the morning is also good.

12:02 Modern's take on New Haven definitely had more cheese than its competitors,

12:06 was a little greasier, and the sauce profile was definitely more noticeable.

12:09 I let the pizza cool and ignored the voices

12:12 in my head that told me to eat it right now.

12:14 Modern had my favorite crust so far, and since crust is 30% of the total score,

12:18 and I'm the guy that made up the rules and is deciding everything by myself,

12:21 that'll bode pretty well for them.

12:23 And yeah, this is definitely one of my favorites, if not my favorite so far.

12:30 After sitting on the contemplation stump and determining what to do next,

12:34 I think we should do pizza the rest of the day.

12:36 We decided more pizza was going to be the move.

12:38 We got coffee at a cool shop down the street before I went

12:41 to Ash Wednesday Mass at the start of Lent on Yale University's campus.

12:46 Mary's was legitimately so beautiful, I cried for about a half hour during mass.

12:50 And I don't cry easily.

12:52 Okay, I do cry easily, but still it was immaculate.

12:54 That is one of the most beautiful churches I've ever seen in my entire life.

12:57 Bill and I met back up and walked around Yale's campus,

13:00 which was incredibly beautiful.

13:02 My IQ has gone up 10 points.

13:05 The IQ of the students and faculty here has gone

13:08 down 10 points as a result of us being here.

13:10 We've been so focused on pizza deletion

13:12 that I totally forgot about this university.

13:14 It felt like I was in Hogwarts.

13:16 And before more pizza deletion ensued,

13:18 we went to one of the most beautiful libraries in America,

13:21 the Bicki Rare Book and Manuscript Library.

13:24 And a sixth spot on the list is SS, which not shocking to anybody,

13:42 And if it's not, guys, uh, please forgive me.

13:46 Um, I am a professional dumbass and it was

13:48 cool to eat our beats right by the street.

13:51 And good news for the haters, I burnt the inside of my mouth again.

13:54 I thought the pizza was a little greasy

13:55 and the sauce was not as flavorful as the other pizzas,

13:58 but the taste from the crust and the cheese was definitely there.

14:00 Oh, and Bill and I absolutely housed another pizza,

14:03 which is not good because we still have four more spots to go to.

14:06 But then I realized that at each spot,

14:08 Bill has been eating one to two slices of pizza.

14:11 And since each pizza has eight slices, that means I've been eating the rest.

14:36 we stopped at a bakery called Sweet Mary's and maybe

14:39 had the best cupcakes of all time from Mary herself.

14:46 Oh my god, it's so good.

15:10 The first was an iconic spot that many thought could win this competition,

15:13 and that was Ernie, founded in 1971.

16:11 The cheese was phenomenal.

16:16 If I had to make one nitpicking criticism,

16:19 a little bit more char in the crust, but again, like that is a small criticism.

16:23 This is a heavy hitter right here.

16:25 I'm excited to see if Ernie wins at all.

16:28 But you know, this is good for the plot.

16:29 We said goodbye to Alex and Briana, two of the nicest people I've ever met,

16:32 as well as my favorite celebrity pizza owner,

16:34 Pasqual, and headed over to our eighth spot, which was a highly recommended spot

16:38 in the neighboring town of West Haven, Zap Parties.

16:41 Ooh, watch me touch their sign.

16:44 Founded in 1934, this spot is literally

16:47 just in a regular neighborhood in West Haven.

16:49 This is my uh is my urine right now.

16:51 That is a joke, by the way.

16:52 That is orange soda.

16:53 The pizza came out and you may notice that it's not perfectly

16:57 a circle which is another characteristic of the New Haven to beats roundish.

17:02 It kind of looked like my head when I was

17:04 in a batting cage but didn't get out quickly enough and my brother

17:06 didn't know I was still in the batting cage and he

17:09 accidentally hit me in the head with his baseball bat.

17:12 Zapardis makes a wonderful pie.

17:14 Everything comes together really nicely here.

17:16 The savory tomato sauce, the nice charred crust,

17:19 the cheese is the right amount and allows

17:20 the rest of the pizza components to shine.

17:22 It is definitely one of my favorite tasting pies so far.

17:25 I might have said that a lot recently, but I'm going to keep saying it.

17:29 Still haven't learned how to eat without giving my mouth thirdderee burns.

18:12 Created in 2018 after changing the name of the restaurant from Jet to Nolo,

18:17 this place takes on a more modern approach to the New Haven style beats,

18:20 which could be confusing for idiots like me

18:22 because modern is a restaurant that we visited.

18:26 I'm referring to the adjective modern, which means recent,

18:29 but honestly, my expectations on this spot were not very high.

18:33 And boy, were they shattered.

18:34 The crust was phenomenal.

18:36 The sauce had a ton of flavor.

18:37 And the cheese was a little more profound than a typical New Haven style pie,

18:41 but not in a bad way.

18:42 Even though this is one of the newer locations,

18:44 there is a shot that Delegna at Nolo wins the whole competition,

18:48 which is crazy to say.

18:49 I mean, damn, this was phenomenal pizza.

18:51 But I'm glad I controlled myself this time and didn't go too crazy.

18:55 And damn it, I ate another whole pizza by myself again, didn't I?

19:05 Bill then confessed that even though he's had

19:07 only one to two slices of pizza per spot, he's pretty clogged up right now.

19:18 And the last spot on this list,

19:19 right across the way from Frank Pepe was Zanelli.

19:22 I didn't know this until I put in an order,

19:24 but they don't make New Haven style pie.

19:26 They actually focus on Neapolitan pizza.

19:29 Neapolitan style pizza has a soft and flexible crust

19:32 with a puffy airy outer edge called a cornicion.

19:35 There is no shot I pronounced that correctly.

19:37 It has a light and fresh tomato sauce often uncooked

19:40 with minimal traditional toppings like basil olive oil and mozzarella.

19:43 And it's also only cooked 60 to 90 seconds at 900° F in a woodfired oven.

19:49 So, while technically it's not a New Haven style pizza,

19:52 it is a pizza in New Haven and I'm the judge around here, so I will allow it.

19:57 I got the closest thing I could to a regular pizza,

20:00 that being a margarita pizza.

20:01 And after having a lot of New Haven style, certainly not complaining.

20:04 This definitely was a nice change up from that.

20:06 And I really enjoy the sauce.

20:08 That was one of my favorite sauces I've tasted so far.

20:10 And the thicker, chewier crust was cooked very nicely as well.

20:20 And again, just like this whole family oriented thing

20:23 in New Haven and with pizza making is just so special.

22:48 Bill and I went back to a bar we went to the previous night called Stella Blues.

22:52 And there was a guy playing that night

22:53 that did something really inspirational for me.

22:56 Aside from his talent in performing live,

22:58 it was a quiet weekn night on Yale's campus and he

23:00 was playing in front of like 10 to 15 people or so.

23:02 But he kept talking about how much fun he had playing in front

23:05 of those 10 to 15 people and how proud he was to be a dad.
